If you’ve never made granola before, it’s surprisingly easy! This granola is SOOO good! I seriously can’t stop eating it every time I make it. And I love that I can control the ingredients so I know it’s healthy (and gluten-free!). If you eat gluten-free, you know that most store-bought granola contains gluten, as well as processed sugar. It’s so simple to make yourself at home.
Ingredients
- 2 cups rolled oats (I buy THESE gluten-free oats)
- 1/2 cup shredded coconut, unsweetened
- 3/4 cup sliced almonds (or any other nuts of your choice)
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp sea salt
- 2/3 cup coconut oil
- 1/2 cup raw honey
- 1 tsp vanilla extract
- 1 cup dried fruit (I like cranberries, wolfberries, blueberries, or mango)
Optional: I throw in some ground flaxseed, pumpkin seeds, chia seeds and a few cacao nibs. I don’t measure, I just sort of sprinkle and toss.
Instructions
Heat oven to 350. Mix oats, shredded coconut, spices and nuts together in a mixing bowl. Warm coconut oil, honey and vanilla is a small saucepan. Once melted and combined, pour over dry mixture and toss to coat. Spread in an even layer on a parchment-lined baking sheet. Bake 20-30 minutes until starting to brown, stirring 2 or 3 times. Remove from the oven and mix in dried fruit. Allow to cool, then it’s ready to eat!

That’s it! I store mine on the counter in a large bowl. And I’m not gonna lie…I sneak bites pretty much every time I’m in the kitchen.
