Is it stuffing or dressing? I’ve always called it stuffing, even though I prefer it to not have been “stuffed”. LOL!! When I started eating gluten-free a few years ago, I didn’t want to give up my Thanksgiving favorites. I’ve been making this recipe for several years now and my whole family LOVES it! It’s my absolute favorite stuffing recipe, gluten or not. (If you don’t eat gluten-free, you can just use regular bread for this recipe. Easy peasy!)
Cooking with my best girl last Thanksgiving Day…
Ingredients
- 1 box of gluten-free cornbread – prepared according to instructions (I like the easy way, but you can make from scratch if you’re feeling extra motivated! I use Krusteaz honey cornbread.)
- 2-3 slices of gluten-free bread (I like Schar brand, but any will work!)
- 1 cup chopped celery
- 1 small onion, chopped (we don’t love onions, so I just use onion flakes)
- 1/2 stick of butter
- 2 eggs
- 1 can cream of chicken
- 1 1/2 cups chicken broth
- 1 teaspoon ground sage
- A few sprinkles of rosemary
- 1 drop Thyme Vitality oil (get it HERE)
- 2 drops Black Pepper Vitality oil (get it HERE)
- Pinch of salt
Note – I love using the oils because their flavor is so much more vibrant than dried herbs. Plus, they’re easy to keep on-hand and don’t expire. But if you don’t have them, you can substitute 1 teaspoon dried thyme and 1/2 teaspoon black pepper.
Directions
It’s best if the bread is dry instead of soft, so I usually leave the bread slices out on the counter the night before. (Although gluten-free bread tends to be more dry, so it’s not necessarily required to let it sit out.)
Preheat oven to 375 degrees. Tear the bread into smaller breadcrumb pieces. Crumble the cooked cornbread in a large bowl, then mix in the breadcrumbs and set aside.
In a large skillet, melt butter and sauté veggies until tender. Add veggie mixture and all remaining ingredients to cornbread mixture and stir until fully combined. Spread evenly in a greased 9×13 baking dish.
Bake 30-45 minutes or until top is golden brown and stuffing is cooked all the way through.
So. Yummy. Bring on the turkey and mashed potatoes!
